Before you hit the 'Apply' button on the FSSAI portal, you must have your documentation and infrastructure in order. A missing document is the number one cause of deferred applications.

1. Document Checklist (The Big Three)

• Identity Proof: PAN Card, Aadhaar, or Voter ID of the proprietor/partners.
• Address Proof: Property Tax Receipt, Rent Agreement, or Utility Bill of the business premises.
• Photos: Clear passport-size photograph of the applicant and, in some cases, pictures of the kitchen/unit.

2. Infrastructure Requirements (For Licenses)

• Water Test Report: A lab report from an NABL-approved laboratory confirming the water used in the kitchen is potable.
• Layout Plan: A dimensioned sketch of the kitchen area showing different zones (Cleaning, Cooking, Storage).
• Machinery List: A list of all heavy equipment used along with their power (HP) ratings.

3. Mandatory Record Keeping

Once licensed, you must maintain certain records permanently:

• Medical Certificates: Annual health checks for all food handlers.
• Pest Control: Evidence of regular pest control treatment.
• Purchase Invoices: Proof that you buy raw materials from other FSSAI-licensed vendors.
